Ingredients

  1. 2 eachSalmon Filets
  2. 2 tbspFresh basil, chopped
  3. 1/2 tspFresh ground garlic
  4. 1/2 tbspLemon juice
  5. 1/2 tspLime Juice
  6. 1 tspDijon Mustard
  7. 3 tbspExtra Virgin Olive Oil
  8. 1/4 cupCapers
  9. 1 cupSauerkraut
  10. 2 dashParmesan cheese

Cooking Instructions

    Coat filets with Basil, garlic, lemon, lime.

    Let marinate 15 minutes

  3. 3

    Put olive oil in skillet.

  4. 4

    Place filets in skillet and cook on medium heat 20 minutes on first side

  5. 5

    Turn filets and add capers.

  6. 6

    Add sauerkraut around slides of skillet. Place avocado slices on top of the sauerkraut.

    Cook 10 minutes on second side

    Cut salmon down center and remove dark gray skin.

  9. 9

    Check for doneness of filets.

    If salmon is evenly done, plate the fish, kraut, and avocados, and sprinkle with Parmesan cheese.

    Serve with onion and yellow squash, and garlic toast.
