Crayfish Bisque-Style Soup
“What, are you throwing away those shells!?” The shells and heads filled with tomalley can be made into a delicious bisque-style soup!Origin of this recipeThe American crayfish, seen throughout Japan, was introduced as food for bullfrogs in the early Showa era and has since spread as an invasive species, negatively impacting native rare plants and animals. However, in its native land, it is considered a delicacy! If caught in clean water, give it a try. *Be sure to cook thoroughly.

Nam Prik Ong (Central Thai Style)
Today, I'm sharing the third chili paste recipe: Nam Prik Ong. I specify it's a Central Thai style because I'm not sure how it's made in the Northern region. This version uses shrimp paste instead of fermented soybeans and has a balanced flavor profile of sour, salty, and sweet, which suits Central Thai tastes. Note: I apologize to my Northern Thai friends for modifying the recipe.

Palm nut soup/ ofe akwu
I love food lol but my favorite soup of all, is this beautiful palm nut soup. The flavor of the palm nut is indescribable and delicious 😋! The palm tree is just amazing that you can get wine from it and it’s no low class wine either! Palm oil is a must for a lot of Igbo dishes and of course the palm nut soup 🍜 is time consuming but so worth it !
