A delicious way to eat bok-choy one of my favorite vegetables. Low-carb

Ingredients

  1. 3baby bok choy
  2. 1medium vine ripened tomato
  3. 1medium cucumber
  4. 4 slicesham luncheon meat
  5. 1/2 cupshredded colby cheddar, Monterey jack cheese
  6. 1/2 cupchunk swiss cheese
  7. To tastesalt and ground black pepper
  8. To tastered wine vinegar optional
  9. To tasteextra virgin olive oil optional
  10. To tasteyour favorite dressing optional

Cooking Instructions

  1. 1

    Wash and finely chop the bok-choy. Slice the tomato into thin wedges. Wash and peel the cucumber with stripes then cube it.

  2. 2

    Roll the ham and slice into ribbons. Add to the rest of the salad. Add the cheeses and toss well.

  3. 3

    Serve with salt and pepper. Add the dressing. I hope you enjoy
