Ingredients

  1. 1 kgMutton
  2. 3Onions in 3 forms (sliced,paste and peeled small pickled onion)
  3. 2-3 tbspginger garlic paste
  4. 4Tomato puree or paste
  5. as requiredSaboot garam masala(tejpatta,laung,dalchini,badi illachi)
  6. 1 tspturmeric powder
  7. 1 tspdhaniya powder
  8. as per tastered chilli powder
  9. to tasteSalt
  10. 4 tbspCurd for marination
  11. as requiredMustard oil and desi ghee for cooking

Cooking Instructions

    Marinate the mutton f0r 1hr.Slice 3 medium sized onion,paste of 2 medium size onion and small peeled onion 8-10 pieces.

    In a pressure cooker heat oil and fry the onion till brown or golden brown in colour.Take out and keep aside.

    In the same oil add the saboot garam Masala when it starts spluttering add the masala paste (ginger,garlic,onion)along with tomato purée cook for 5 mins and add the powdered masala cook till the rawness gets over.Now add the marinated mutton and cook on medium heat covered.

    After 10 mins add the peeled onion again cover and cook,at this point the mutton will start releasing the water keep it on medium to low heat and cook till the water dries up,keep an eye and stir in between.

    When the mutton looks half done and the water evaporates add the fried onion along with salt and stir the mutton,after adding the salt the mutton will release the oil add water fr gravy as desired,water shouldd be Lukewarm and pressure the mutton till 2 whistles on high and simmer for 1/2 an hour.
