Matcha Steamed Layer Cake (Bánh da lợn)

Prepare the ingredients: tapioca starch, rice flour, canned coconut milk, and matcha powder.

Dissolve the matcha powder in a little water. Divide the flour mixture into two portions. Add the matcha to one portion and the cooked, blended mung beans to the other.

Heat the coconut milk with 1 1/4 cups sugar until just warm and the sugar dissolves. Divide the mixture in half and mix each half with one of the flour mixtures. Strain each batter to make it smooth.

Grease a cake pan and bring your steamer to a boil. Pour in a layer of one color and steam until set, then add a layer of the mung bean mixture. Steam until set, then add a layer of the matcha mixture. Continue alternating layers until all the batter is used.

When the cake is fully steamed, test with a toothpick—if it comes out clean and the cake looks translucent, it's done. Total steaming time is about 45 minutes. Let the cake cool before cutting for easier slicing. Enjoy!
