Cooking Instructions

First, clean and wash the urad dal thoroughly and soak it for 4 to 5 hours. After that, wash it again and let it sit in a strainer for half an hour to drain all the water.

Now, put the dal in a blender jar, add one to two teaspoons of water, and grind it. Do not add more water. Add yogurt one teaspoon at a time to make a smooth paste.

Transfer it to a bowl.

Start making the syrup by adding water and sugar to a pan and bringing it to a boil.

Once it boils, add cardamom powder and coloring. Let it simmer on low heat for five minutes. I used coloring because I didn't have saffron.

While the syrup is cooking, prepare the batter. Beat the batter continuously for five minutes to incorporate air and lighten it. Make sure to beat it in one direction. Finally, add baking powder and mix gently.

Add ghee to a pan and let it heat slightly. I used a milk packet to make the jalebi, but you can use a sauce bottle or piping bag. The ghee should be medium hot for making jalebi. Shape the jalebi as you like, fry until light brown, and immediately dip in the syrup for thirty seconds.

Your hot, crispy, and juicy jalebi is ready.

Note - Keep the flame low while making jalebi.
