Cooking Instructions

First, sort and rinse the rice and dal thoroughly with water 2 to 3 times. Then soak them in water with fenugreek seeds for 7 to 8 hours. After soaking, grind them finely in a grinder. Place the dosa mixture in a large pot and cover it, leaving it on the kitchen counter for 7 to 8 hours to ferment. Once fermented, add salt and baking soda to the dosa mixture. Now, let's make the dosa masala.

Heat a pan over medium heat and add vegetable oil. Once hot, add green chili and cumin seeds. When the cumin seeds start to crackle, add the onion and sauté until golden brown. Then add the tomato and salt, cover, and let it cook for a while. Uncover and sauté everything well for a minute. Add mashed potatoes, turmeric, red chili powder, and coriander powder, and sauté everything for 5 minutes. Turn off the heat.

To make dosa, you need a smooth griddle. Before making dosa, cook 4 to 5 flatbreads on the griddle to make it smooth. Now, place a griddle on low heat. In a bowl, mix a glass of water with a teaspoon of salt. Once the griddle is slightly hot, sprinkle the saltwater on it and wipe it with a clean cloth. On low heat, pour a cup of dosa mixture onto the griddle and spread it well. Drizzle oil around the dosa and increase the heat to medium.

Place two tablespoons of potato masala on the dosa. Use a spatula to lift the edges of the dosa and fold it, then transfer it to a plate.

Now our masala dosa is ready. Serve it with coconut chutney and sambar.
