Clean red carrots very nicely and peel them.
Then chop it roughly.
Take beetroot, chop that too.
Now put the carrot and beetroot pieces in a grinder jar. - 2
Grind coarsely. Put this carrot and beetroot into a pressure cooker. Add 250 ml milk.

Let all get cooked together at slow to medium heat for some time. Then add a pinch of salt and give a nice mix. Now put the pressure lid. Cook at the slowest heat for 2-3 whistles.
Let it cool and release pressure. Open the lid and mash with a masher. - 4
Now add the rest of the milk, milk powder, and sugar. Mix and cook all together. While it's cooking, add pounded green cardamoms. Cook for some time. Then add coarsely crushed almonds.
You can add cashews too. - 5
As gradually the halwa is becoming thick, add ghee and oil. Mix well. Go on stirring and mixing. Add pineapple essence (optional though, I love adding it). Keep on stirring and mixing till you get a nice thick halwa consistency.
The colour becomes reddish and orangish and the aroma is superb. - 6
Switch the heat off. Let the halwa come to room temperature. Garnish with dry fruits and kishmish.
