Gratinéed Onion Soup Made with Fu Dried Wheat Gluten

A friend gave me delicious fu (an 80 cm long tube!) so I wanted to try making different things with it.
The fu has a very mild taste, so it's more delicious with lots of cheese on top. For 3 to 4 servings. Recipe by Shubuta

Steps
- 1
Rehydrate the fu in water. (I used a type of fu that you slice off that I got from a friend.)
- 2
Thinly slice the onion, and sauté in butter slowly.
- 3
Add water and soup stock cube to the onion, and season with salt and pepper.
- 4
Put the soup in a heatproof soup mug. Top with a piece of wrung out fu from Step 1, and add cheese.
- 5
Toast in a toaster oven for 5 to 6 minutes, sprinkle chopped parsley and it's done. (Adjust the cooking time depending on your toaster oven.)
