Firstly, in a food processor or a mixie jar, add all the ingredients mentioned under “To Be Ground to a Smooth Paste” and grind it fine. The mixture to make chicken kofta is ready.

Next to semi fry the chicken koftas, take small portions from the mixture and form it into koftas. Heat oil on medium flame and fry the chicken koftas until slightly golden. Remove and set it aside. Strain the oil and use it for the next process.

Heat half cup of oil in a pan. Add the sliced onions, cashewnuts and green chillies and fry until the onions turn soft. Remove from oil and transfer it to a plate and set it aside to cool. When cool, transfer it into a blender. Add mace, green cardamom and little water and grind it into a fine paste. Assemble all the ingredients required to make the chicken malai kofta with white gravy.

Heat the same oil in which the onions-cashews were fried. Add the bay leaves, cinnamon sticks and the ginger garlic paste and saute for half a minute.

Now add the prepared onion-cashew paste. Add little water, if the paste is too thick. Next add white pepper powder, crushed peppercorns, chicken masala, roasted cumin powder and salt. Saute till oil appears at the surface. Add the whisked curd and continue to saute till oil appears at the surface once again.

Add the fresh cream and little water, as per desired consistency and mix it well. Add the fried chicken koftas and crushed kasuri methi and mix it well. Cover and cook on low flame for 10-12 minutes. Garnish with chopped coriander leaves and give it a gentle stir.
