Egusi soup and rolled up pounded yam

I’d always say healthy eating is healthy living and note please if you’re hypertensive and looking to reduce weight, this should be taken in the most minimal quantity and the reason is this, palm oil used to make egusi soup is a saturated fat and when it is bleached it changes to a trans fat which is not healthy for the heart this is for hypertensive persons , but I’m not managing any hypertensive case so I did just a little of bleaching and also the melon seeds contains fats so as a person looking to reduce weight or even a hypertensive person you don’t need too much of fat, so ensure the vegetables in your egusi is much more.

Slice your yam and boil

Dice your onions into egusi and form a mould

, bleach your oil a little bit if you’re hypertensive no bleaching just add your blender tomatoes and pepper in a pot then you add your oil inside and allow to cook before any other step

Into the bleached oil add onions and sweat a bit then add your blended tomatoes and pepper and allow to boil.

If you’re using your stock water from your chicken or meat to cook, you can add it in at this point, if you’re hypertensive, the stock water from your boiled chicken or meat is just enough to cook your egusi, because you need less of salt and seasoning, because salt contains sodium which too much of it isn’t good for the heart at that state.

Then you allow to simmer well and taste for corrections, then your mounded ball of egusi, you cut it bits by bits into the pot

Dd a little water then allow to cook, and check for the consistency then your vegetables should be the last thing to go on with.our egusi is ready

Over to our yam, Wash your mortar and pestle then add your boiled yam into it and pound into a smooth consistency
