Passion Lemonade Cooler

Just last week, I had my winter pajamas out, fluffy socks and everything cozy; convinced that the cool, windy spell from Cyclone Jude meant we were settling into colder days. But, as Malawian weather loves to remind us, that did not last long. The heat is back in full force, and with it, the need for something refreshing to cool down.
That explains why I borrowed this passion fruit and chia-infused lemonade recipe from Regina, a nutritious food enthusiast and lover of making just about everything in her home kitchen. I can confirm that this lemonade cooler is a bright, tangy, and slightly tropical twist on a classic, packed with hydration and soothing for the throat. Syrup: Bring the sugar, ginger (if using), and water to a boil in a saucepan. Whisk to dissolve the sugar and once boiling, turn heat down to a simmer

Cook until the syrup is starting to thicken (about 5 minutes).Take off heat and set aside to cool

Lemonade:
Stir the chia seeds into the water in a pitcher and let soak to bloom for 10 minutes. Scoop out the juice, pulp, and passion fruit seeds and mix with the chia water - 4
Stir in the lemon juice and syrup. Chill for and hour or serve immediately with ice

Optionally garnish with mint or lemon slices and enjoy 😋
