Preheat the oven to 180°C. Grease and line two 6 inch cake tins.

Cream butter and sugar together until pale and fluffy.

Add eggs and lemon extract, whisk until smooth.

Sift in flour and baking powder, fold gently to combine.

Pour batter into tin, smooth the top.

Bake for 20-25 minutes until golden and springy. Allow to cool.

Add lemon curd to the first layer of your cake, pop your second layer on top.

Sift icing sugar on top and you're done. Enjoy with a cup of tea ☕ 🍰
Tips
Cream the butter and sugar well for a light and fluffy texture.
