My favourite Ganeshotsav is round the corner. I have baked Modaks with Date and nuts stuffing, for Ganu Bappa.
Steps

For Stuffing: Dry roast nuts on slow gas. (I have roasted some nuts for another recipe also). Transfer to a plate. Similarly, roast khus khus and dessicated coconut too. Cool and chop the nuts.

Chop the soft dates finely. In a pan take 1tsp ghee and add in the dates.

Press and cook the dates until soft. Take it in a plate. Cool and mix all the stuffing ingredients. Use some ghee if needed and form a sodt stuffing mixture.

Make small balls of the stuffing mixture.

For Modak Cookie Dough: Keep all the dough ingredients handy. Sift atta, rava, powdered sugar and baking powder. Add in 2tsp ghee, butter and vanilla essence.

Mix gently so that each flour particle is coated with butter and the mixture looks like bread crumbs. When taken in fist it should hold shape, else add little ghee. Add in little milk and bring the dough together.

Do not over knead. Just combine and bring the dough together.

Shaping of the Modak Cookie: Make equal portions of the dough. Take a ball and roll into dry fine rava. Set into the 2 sides of the modak mould.

Close mould and set properly. Make a cavity inside for stuffing. Insert the stuffing ball in the cavity created. Set properly and remove all extra dough which comes out of the mould.

Open the modak mould. BEAUTIFUL STUFFED MODAK COOKIE is shaped. Similarly, shape the modak cookies. The rava on the outer side gives a lovely texture to the modak cookies.

Preheat oven at 150°C. Arrange the Stuffed Modak Cookies on a baking tray lined with a baking paper. Bake until golden brownish hue comes on the cookies and some cracks also come. This indicates that the Stuffed Modak Cookies are well baked. Take them out on a wire rack.

Cool the Stuffed Modak Cookies completely.

Offer the Stuffed Modak Cookies to Ganpati and seek the Divine Blessings. Then distribute as Holy Prashad and enjoy the Ganeshotsav festival.
