Broccoli cheddar soup

Bake bacon in oven at 400°F for 25 minutes. Let cool and chop into pieces.

Add 3 tbsp butter and grease from baking bacon into Dutch oven. Cook onions until done. Add garlic and cook until fragrant.

Add 1/3 cup flour and stir until fully incorporated.

Slowly pour in chicken broth, stirring and scraping browned bits from the bottom of the pot.

Add 1 cup milk and 1 cup heavy cream, stir. Then add 1/2 tsp salt, 1/4 tsp nutmeg, 1/4 tsp cayenne pepper, and black pepper, stir. Then add broccoli and carrots, stir.

Bring to boil then let simmer for 15 minutes, until the broccoli and carrots are done.

Add shredded cheeses. Stir until melted and combined. Let simmer for 5 more minutes.

Remove form heat and let cool for 10 minutes. Top with bacon pieces.
