Sauté the onion in a little olive oil. Cut the vegetables into cubes and add them (except for the tomato, which you’ll add in the last few minutes of cooking).

Season with salt, pepper, and Herbes de Provence.

Add a splash of balsamic vinegar and let everything simmer over low heat.
