The Lost Gardens of Heligan in Cornwall is one of my favourite places. They serve a fantastic pineapple fruit cake. I've attempted to recreate it with this recipe but have used tropical fruit instead of pineapple.

The Lost Gardens of Heligan in Cornwall is one of my favourite places. They serve a fantastic pineapple fruit cake. I've attempted to recreate it with this recipe but have used tropical fruit instead of pineapple.
Steps

Place crushed tropical fruit, dried fruit, butter, sugar, vanilla essence and brandy in a saucepan and heat gently until the butter has melted.

Bring mixtures to the boil and then simmer for approx. 5 minutes

Cool

Sift plain flour, self-raising flour and bicarbonate of soda together

Add beaten eggs to cooled fruit mixture. Stir gently.

Add dry flour mixture and stir.

Place mixture in a prepared 20cm round cake tin. Sprinkle with sugar for a crunchy top (optional).

Bake 180C for approx 1.5 hours. Skewer test the middle after 1 hour 15 minutes to check if the cake is cooked or needs a little longer. Cool slightly then turn out onto a wire rack to cool fully.
