Ingredients

  • 250 gcooked peeled extra-large tiger prawns
  • 1 tbspOriental fish sauce
  • Few tbsp lime juice
  • 1/2 teaspoonlight brown sugar
  • 1small fresh red chili, finely chopped
  • 1spring onion, finely chopped
  • 1small garlic clove crushed
  • 2.5 cmthese fresh lemongrass finely chopped
  • 2 tbspchopped fresh coriander
  • 2 tbspdry white wine
  • Lettuce of your choice, Cos, Little Gem, Iceberg, to serve fresh coriander sprigs to garnish

Steps

  1. 1

    Place the tiger prawns in a bowl and add all the remaining ingredients stop stairwell, cover and leave to marinate in the fridge for 2 to 3 hours, mixing and turning the prawns occasionally.

    Arrange 2 or 3 other lettuce leaves each of 4 individual serving plates
