I confess that I love Coles’ ‘Kale Coleslaw Salad Kit’ and have bought it many times. A bag of veggies comes with dressing and some seeds, and it is $5! Why don’t I try to make it by myself? So I imitated the Coles’ Kale Coleslaw. The cost of making it could be around $2 or less… It’s a big saving and also I know exactly what’s in the dressing.

Ingredients

2 to 4 servings
  1. 2large stems of Kale *thick stems removed, thinly sliced
  2. 1Carrot *thinly sliced into strips
  3. 2-3 leavesRed Cabbage *thinly sliced
  4. 1small Beetroot *thinly sliced into strips, rinsed
  5. 2 tablespoonsSeeds *e.g. Pepita (Pumpkin Seeds), Sunflower Seeds, Sesame Seeds
  6. Dressing
  7. 3 tablespoonsPlain Greek Yogurt
  8. 1 tablespoonJapanese Mayonnaise
  9. 1/4 teaspoonGrated Garlic *OR 1/2 teaspoon Garlic Powder
  10. 1 tablespoonWhite Wine Vinegar OR Lemon Juice
  11. 1 teaspoonSugar *OR Honey, Maple Syrup, other sweetening
  12. 1/2 teaspoonHerbs of your choice *I used dry Italian Herb Mix
  13. Salt & Black Pepper

Steps

  1. 1

    Place all the Dressing Ingredients in a small bowl, mix well and season with Salt and Pepper.

  2. 2

    In a large bowl, combine all vegetables. Drizzle in the dressing and mix thoroughly. Add extra Salt & Pepper if required. Cover with plastic wrap and refrigerate for 20 to 30 minutes.

  3. 3

    Add the Seeds and combine well and serve.
