Cauliflower and tofu with basmati rice

Ingredients

  1. 1 cupbasmati rice
  2. 1 packet (297 g)firm tofu
  3. 200 gcauliflower
  4. 1yellow pepper
  5. to fryCoconut oil
  6. to fryOlive oil
  7. 2 tablespoonscornstarch
  8. 2 tablespoonbrown sugar
  9. 2 clovesgarlic
  10. 80 mlsoy sauce
  11. 3 tablespoonrice white vinegar
  12. 1/2 cupwater
  13. 1 1/2 cupchicken broth
  14. to tasteSalt
  15. to tastePepper

Cooking Instructions

    Boil one cup of basmati rice until cooked and put aside.

    Cut the yellow pepper into cubes and the cauliflower into bite sizes

  3. 3

    Heat olive oil in a frying pan and fry yellow pepper and cauliflower, adding a little bit of water until tender

  4. 4

    In another pab, heat coconut oil. Cut tofu into small cubes and fry until golden brown

  5. 5

    Mix the other remaining ingredients to make the sauce, then pour the sauce in the pepper and cauliflower pan

  6. 6

    Allow the mixture to simmer for about 3 minutes or until sauce its thick and nice.

  7. 7

    Serve with basmati rice.
