Chicken Schnitzel

A European dish widely popular all over the world. Tonkatsu in Japan, Frakh Pane in Egypt, Milanesa in South America, Chicken fried steak in USA- all have one thing in common- meat pounded thin, breaded and then fried. Just like Schnitzel. Every region has their own way of making it and they are all awesome.
Chicken Schnitzel

Step 1 – Cut the chicken breast in half horizontally.

Step 2 – Cover it with plastic wrap and using a meat mallet pound it thin.

Step 3 – Add salt and pepper, garlic powder, onion powder, smoked paprika, dried oregano, dried basil, chicken soup seasoning, Dijon mustard to the chicken breasts. Mix well. Marinate for a minimum of 30 mins.

Step 4 – Set up for breading
Using 3 mixing bowl large enough to cover the chicken breasts- add flour to the first one, crack 2 eggs in the middle one and add panko breadcrumbs to the last one. - 5
Step 4 – add salt and pepper to the eggs and mix well.

Step 5- add salt, pepper and smoked paprika to the breadcrumbs and mix well. It adds a nice flavor to the breading

Step 6 – coat both sides of the marinated chicken breast with flour, then add to the egg mix. Dip both sides properly. Then before adding to the breadcrumbs let excess egg mix drip of from the breasts. Then coat both sides nicely with breadcrumbs.

Step 7 – Put in the freezer for 30 mins. I find the breadcrumbs stick nicely and the chicken breast hold its shape nicely.

Step 7 – Heat oil on med hi heat

Step 8 – add the breaded chicken breast and fry 3-4 mins/side. Enjoy !!
