Pot pies have been around since 9500 BC as per archaeologists through their findings. I am sure few things have changed since then. It can be made in various ways. It’s a delicious comfort food. I made these in a curry flavor as mini pies.

  1. For chicken
  2. 1chicken breast (small chunks)
  3. 1med potato cubed
  4. 1cup frozen peas and carrot mix
  5. 1/2tsp curry powder
  6. 1/4tsp chilli powder
  7. 1/4cup shallots/onion sliced
  8. 1/2tsp garlic paste
  9. 1/2tsp ginger paste
  10. 2tsp olive oil
  11. For white sauce
  12. 5-6tbsp butter
  13. 1heaped tbsp butter
  14. 1/2cup a/p flour
  15. 1/2-3/4cup water (stock can be used too)
  16. Salt and Pepper for seasoning
  17. A pinch of nutmeg
  18. Thawed Puff pastry (1-2 sheets, enough to make sufficient lids)
  19. 4-8small oven safe bakeware

    Step 1- As per direction, thaw the frozen puff pastry (1 to 2 hrs)

    Step 2 – Making the Chicken Curry
    Heat olive oil on med hi heat. Add chicken breast chunks and cook for few minutes. Add the shallots/onion and cook for few mins. Then add 1 tsp of garlic ginger paste and cook for few minutes. Add ½ tsp curry powder, ¼ tsp chilli powder and cook for few minutes. Then add cubed potatoes, frozen peas and carrot mix and cook for few minutes. Add water as required. Add salt for seasoning (1/2 tsp). Cover and cook till everything is tender. Total cook time will be ar

    Step 3 – Making the white sauce
    Heat 5 tbsp of butter on med heat. Once melted add flour and whisk quickly. Then add heavy cream and keep whisking till it the sauce thickens and becomes smooth. The consistency should not be too thick or thin. Add water as needed to adjust the consistency. Add some pepper for seasoning. I added a pinch of nutmeg.

    Step 4 – Add the curry chicken to white sauce.

    Step 5 – Crack 2 eggs and whisk to make egg wash.

    Step 6 – Making lids for the pot pies with puff pastry. I made 6 pot pies.
    Sprinkle some flour on the rolling surface and also on the thawed puff pastry. Stretch it out with a rolling pin. Using the bakeware cut out lids from the pastry. Make sure it covers the bakeware nicely.

    Step 7 – Put egg wash around the bakeware using a brush.

    Step 8 – Fill the bakeware with the chicken mix

    Step 9 – Put the lids on top of the bakeware and press against the sides.

It gives me an opportunity to nurture my family and friends, express my love and care for them.
