Step 1 –Drop the potatoes in the pot in which you will cook. Rinse the potatoes few times with cold water. The extra starch will wash away and potatoes will be crispy. Cover the potatoes with enough water.

Step 2- Put the pot on high heat and cook for 15 mins from this point. We are not going to boil the potatoes for 15 mins. Set the timer for 15 mins from the moment you turn the heat to high

Step 3 – Drop the potatoes in a strainer and rinse with cold water. Its going to wash away some more starch.

Step 4 – Drop the potatoes back in the pot.

Step 5 – Drizzle some olive oil (about 2 tsp),add 3 tbsp of your favorite hot sauce and 1.5 tsp of smoked paprika

Step 6- Cover the pot with the lid and shake it to coat everything nicely.

Step 7- Drop the potatoes on a baking tray and spread them around

Step 8- Bake at 425F for 30 mins.

Step 9- While the potatoes are baking mix 1 tbsp chopped garlic, 1 tsp dried rosemary and 2 tsp olive oil in a bowl.

Step 10- after 30 mins take the potatoes out and spread the above mix on top of the potatoes and bake again for 5-7 mins and its done !! Enjoy !!

I have made fried chicken many ways, southern style fried chicken, Chinese style fried chicken, Karaage chicken, Korean style fried chicken. I have experimented on these styles too. In this version, I incorporated southern style fried chicken with karaage chicken and my mom’s style. I made a wet better using buttermilk and potato starch.
