Nasi Kebuli tanpa daging/ Vegetarian Kebuli rice

Nasi Kebuli biasanya pakai daging, tapi saya buat versi vegetarian nya nih tanpa daging. Menurut saya pengganti daging yang paling cocok adalah berbagai macam jamur, karena tekstur nya yang berserat dan rasanya smoky.
Kebuli Rice was influenced by Arab culture that came to Indonesia. Usually served with goat meat or lamb but I substitute the meat with mushroom for this vegetarian version. In my opinion, mushroom is a perfect substitution for meat because of it's fibry texture and smoky flavour.

Cara Membuat

Cuci beras lalu rendam selama 5 menit. Tiriskan

Panaskan minyak dalam wajan besar, tumis bawang-bawangan, bumbu halus, kayumanis, cengkih, dan pekak hingga harum

Masukkan jamur, tumis hingga jamur berminyak, tambahkan bubuk kari. Aduk rata

Tambahkan air, saus tomat, susu cair atau santan, beri garam dan gula secukupnya. Cicipi dulu kaldunya, koreksi rasa lalu masukkan beras kedalam kaldu. Aron beras sampai semua kaldu terserap habis ke beras.

Kukus beras aron hingga matang (kurang lebih 20 menit)

Hidangkan nasi kebuli selagi hangat, taburi bawang merah goreng

Wash the rice, soak in water for 5 minutes. Drain

Heat oil on a big pan, stir fry onion, garlic, shallot, blended ingredients, cinnamon, star anise, and cloves until fragrant

Add mushroom, cook until mushroom releases it's juice, add curry powder. Mix well

Add water, tomato sauce, milk or coconut milk, and salt and pepper. Taste the broth, make some correction if necessary and then add the rice into the broth. Cook until all the broth absorbed into rice

After all the broth absorbed in the rice, steam rice until it's cooked (around 20 minutes)

Serve Kebuli rice while it's still warm, sprinkle with fried shallot (optional)
