I ran across this recipe online (some random Keto site), thought I'd try making these as my husband said, "Hey! Let's try Keto for the next 30 days." I know, I know, the holidays converted me from a stallion horse to Pumba from the Lion King. So I'll post more Keto friendly recipes as I go on this adventure with my husband for the next to 30 days. Keto Buttermilk Pancakes

Ingredients

  1. 1/3 cupcoconut flour
  2. 1 tbsErythritol
  3. 1/2 tspbaking powder
  4. 1/2 tspbaking soda
  5. 1/4 tspsalt
  6. 1/4 tspxanthan gum
  7. 1/2 cupbuttermilk
  8. 1egg
  9. 2 tbssour cream
  10. 1 tbsmelted unsalted butter

Cooking Instructions

  1. 1

    Combine dry ingredients together (coconut flour down to the xanthan gum)

    Combine wet ingredients in a separate bowl (buttermilk down to the melted butter).

    Mix dry ingredients with wet ingredients.

    Do not over mix. I repeat, do not over mix. The mixture will be thick, but this makes about 4-5 portion sized pancakes.

    Takes a bit longer to cook, but that's ok.

    Heat a little butter in pan and spoon (I used a tablespoon) into pan. Flip when firm at bottom.

    I topped with a little butter and no syrup. One small pancake was enough for me as these are pretty thick, filling and tasty.
