Maharashtrian Koshimbir is cool and refreshing, nutritious salad , prepared with different veggies and to enchance, to make it flavourful tempering of urad dal, mustard,cumin seeds is pour on it.
Here I prepared Koshimbir with beetroot, onion and boiled fresh peanuts.

Steps

In the mixing, plate keep all mentioned ingredients. Mix well.

In a small tadka pan add heat oil. Do tempering of urad dal as it turns pinkish add mustard seeds, cumin seeds, chopped green chili, and asafoetida. Saute for 30 seconds. Pour it on beetroot onion salad.

Transfer it to a serving bowl. Garnish with chopped coriander leaves. Serve Relish Delicious Nutritious Beetroot Koshimbir as a side dish in Meals. Or have as it is.. as Diet meal.
