Wash the vegetables and cut the tofu into your preferred size to complete the prep.

Blend the tomatoes in a blender.

Pour the blended tomatoes into a pot, add about 1 1/2 cups of water, oil, carrot, and baby corn. Cover and simmer for about 6-6.5 minutes.

Add the broccoli and tofu to the pot, and add about 1 1/2 teaspoons of salt. Cover and simmer for about 2.5-3 minutes.

Finally, add the baby bok choy and instant noodles to the pot. Cover and simmer for about 1.5-2 minutes. Once cooked, it's ready to serve.
