Ingredients

  1. 1 cupBasmati Rice75%(boiled)
  2. 1 cupboiled spinach (Palak)paste
  3. 1onion chopped
  4. 1/4 cuppeas
  5. 1/4 cupcarrot
  6. 1/2 cupcauliflower and broccoli
  7. 1/4 cupcabbage
  8. 1 tbsppeanuts
  9. 1/4 cuppaneer fried (diced)
  10. 1/2 cupcoconut milk
  11. 1bay leaf
  12. 2-3green Cardamom
  13. 2-3cloves(laung)
  14. 1small cinnamon
  15. 1/2 tspshahi jeera
  16. 1 inchginger
  17. 4-5 clovesgarlic
  18. 3-4green chillies
  19. 10-12cashews
  20. 1/2 tspdeggi mirch (dry red chilli powder)
  21. 1/2 tspkitchen king masala
  22. 1/4 tspgaram masala
  23. to tasteSalt
  24. 1/4 tspmango powder (amchur)
  25. 2 tbspghee/oil
  26. Pinchsugar

Steps

  1. 1

    Heat a kadai add ghee, shahi jeera add rice fry it for few mins

  2. 2

    Then in a blender add boiled spinach ginger, garlic and green chilli make a fine paste

  3. 3

    Now take a pan add ghee jeera all spices (khadde masala)saute for a min..

  4. 4

    Add onion sauté for 2-3 mins and add all veggies,spices,salt, coconut milk cook for 5mins

  5. 5

    Then add spinach paste in the vegetables and cook for 2-3 mins..add pinch of sugar mix well

  6. 6

    Add the first layer of vegetables at the bottom of a pan /pressure cooker

  7. 7

    Then add layer of rice again layer of vegetables then again layer of rice..garnish with cashews

  8. 8

    Seal the vessel tightly with aluminium foil or dough and place a heavy lid on top

  9. 9

    Cook the biryani for 10-15 mins..serve with raita..
