Roasted potatoes with mustard are a popular crowd pleasing side dish here. For this recipe, I used a microwave to cut down the cooking time, and sautéd the taters in a skillet until they were golden before tossing them with country style dijon mustard :-)

材料

4 servings
  1. yellow potatoes 4 medium
  2. water 1 tablespoon ~
  3. plastic wrap
  4. crispy bacon bits 1/4 cup
  5. fresh Italian parsley 2 tablespoons (minced)
  6. extra virgin olive oil 1 tablespoon
  7. country style dijon mustard 1 tablespoon
  8. kosher salt to taste
  9. freshly ground black pepper to taste

作り方

    Wash and remove any potato sprouts if needed.

  2. 2

    Slice the potato 1/2" thick.

  3. 3

    Place the potatoes in single layer onto the heat safe plate.

  4. 4

    Add 1 tbs water and loosely cover with a plastic wrap.

  5. 5

    Nuke it 4-5 mins at 600 w or until just heated through.

    NOTE: Test with a toothpick to check the potatoes.

  7. 7

    Repeat for the rest of the potatoes.

    Oil in a large skillet over medium heat.

  9. 9

    Place the potatoes and spread them out onto a single layer.

  10. 10

    Cook until golden on both sides. Repeat for the rest of them

  11. 11

    Add bacon/parsley/ mustard. Season with salt and pepper.

  12. 12

    Toss well and taste. Season with salt and pepper as needed.

  13. 13

    Serve.

Use homemade crispy bacon bits for additional flavor and texture.
