Ingredients

  1. Vegetables Required:
  2. 1/2 cupcauliflower (fulgobhi)
  3. 1/2 cupCabbage
  4. 3-4potatoes
  5. 1 cupcarrots
  6. 1/2 cupbottle guard (lauki)
  7. 1capsicum
  8. 1/4beetroot (optional)
  9. 2 tbspGreen garlic (optional)
  10. For tempering :
  11. 1 tspGarlic paste
  12. 1/2 tspginger paste
  13. 2Onions finely chopped
  14. 4tomatoes chopped
  15. 2-3green chillies finely
  16. 1 tspRed chilli powder
  17. 2 tsppav Bhaji Masala
  18. 1lemon (juice) / 1/2 tsp mango powder
  19. 1/4 tspturmeric powder
  20. 1 tspCoriander powder
  21. to tasteSalt
  22. 3-4potatoes
  23. For garnish :
  24. as neededLemon wedges
  25. as neededCoriander leaves chopped

Cooking Instructions

    Cut & wash all vegetables. Add all veggies in pressure cooker. Add 1 cup water. Cook it until 4-5 whistles on medium flame. Switch off gas.

    Let it cool. Mash all veggies with masher.

  3. 3

    Heat butter in Kadhai. Once melted add onions. Saute until translucent. Add garlic, ginger. Saute it for 1 minute.

    Add tomatoes & green chillies. Mash all with masher. Add all dry ingredients. Saute all until gravy leaves oil.

  5. 5

    Add Boiled veggies. Saute all for 4-5 minutes.
    Bhaji is ready.

  6. 6

    Garnish with coriander leaves & lemon wedges. serve with butter pav & chopped onions.
