Crespelle di Sicilia(sweet/savoury)

This recipe is for a basic sweet or savoury Crespelle, a traditional Italian dish passed down to me from my Nonna.
This dish relies primarily on the toppings to make it a wonderful meal however the Crespelle itself does have a mouth watering taste and a beautiful crispy texture, it is very similar to the French Crépe.
Do not be disheartened if your first few attempts are not successful, it can be difficult.
Always experiment with new topping combinations to find ones you like, the possibilities are endless!

Cooking Instructions

Mix dry ingredients in a bowl

Crack eggs into the bowl
- 3
Add milk and whisk thoroughly, the thinner the batter, the thinner the Crespelles
- 4
Let your mixture settle to remove air pockets (optional)

Heat a frying pan on the stove (medium heat) and grease with butter/oil/substitute
- 6
Pour a small amount of your Crespelle mix into the centre of the frying pan, being sure not to overpour, ideally you want the Crespelle to be at least 30mm from the edge of the pan

Once the mixture has started cooking and crisping up, shake the pan a little and then use a spatula to turn over the Crespelle

Continue cooking and flipping until the Crespelle takes on a crispy texture or a slightly stretchy one, generally they will have light brown spots

Stack cooked Crespelles on a plate and store in a warm oven so they remain warm

Serve warm on a plate with toppings rolled up or folded inside (sprinkled with icing sugar if sweet)
