Pickles are an important part of Indian meals. We usually make different types of mango pickles which last the whole year. During winters also we can make some fresh pickles which are eaten fresh and it lasts for a few days or weeks. Winter pickles are a treat with any meal or snacks like paratha or puri. Usually they are made with chillies or root vegetables. They are easy to prepare and enhance the taste of the whole meal.

Ingredients

2 hr + 30 min
1 medium jar
  1. 150 gmfresh big chillies
  2. 1carrot
  3. 1radish
  4. 2 tbspmustard splits
  5. 2 tbspfenugreek splits
  6. 1 tspfennel seeds
  7. 1/2 tbspblack peppercorns
  8. 1 tsp turmeric powder
  9. 2 tspsalt
  10. 1/2 tsphing/ asafoetida
  11. 3 tbspmustard oil

Cooking Instructions

    Wash chillies, radish, carrot and pat them dry. Clean them and cut into pieces. Now put them on a cotton kitchen towel and let them dry in the air for two hours.

    Now in a big bowl, mix together mustard splits, fenugreek splits, fennel seeds, black peppercorns, turmeric, salt and hing. Heat oil until it starts smoking. Now let it cool down at room temperature and add it to the spice mixture. Mix everything well and add prepared veggies to it.

    MIx everything well and cover and keep it for 8 to 10 hours. Keep on stirring in between every 2 to 3 hours. You can even taste salt and add accordingly before storing it in a jar. This pickle can be stored in the refrigerator for two weeks.
