Here is a simple recipe for mini buns using charcoal jiko.
Cooking Instructions
- 1
Combine all the dry ingredients(Flour, salt, sugar, yeast). I used the normal cup for measuring to cater for those who don't have the weighing scale nor the measuring cups.
- 2
Pour the 2 tablespoon oil and mix with hands.
- 3
Make a well and add the luke warm water bit by bit just like when making chapati.
- 4
Knead thoroughly, don't be in a hurry.(I kneaded for 5 mins)
- 5
Cover and let it rest.
It should double in size.(45mins-1hr). - 6
When it doubles in size, knead again and divide into balls.
- 7
Roll the balls into rod like shapes.
- 8
Take a lid(The ones we use to cover sufuria.) and apply margarine, sprinkle a little flour then place the log shaped dough.
Space them out to give room for rising/ expanding - 9
Brush with eggwash and give it time to rise as you light your jiko.
- 10
Take a bigger sufuria and put mawe/pebbles(I used a metallic bowl), followed by the lid containing the buns. Cover with a bigger lid.
- 11
When the jiko is lit, put the charcoal on top of the lid as shown
- 12
How it looks like 20 mins into baking. I let it bake for 5 more mins to achieve a nice golden colour.
- 13
Voilà. Our buns are ready. Serve with tea or your favourite soup.
- 14
If using an oven bake for 15-20mins at 180°c

Hamburger buns Hamburger buns
Having been confined at home for several weeks, I'm craving for a good cheeseburger. Unfortunately, it is really hard to find ready-to-eat hamburger buns in supermarkets where I live, in Japan.Cooking time says 4 hours, but most of it is waiting! Just make sure you're getting started early enough to have your buns ready when it's time to assemble burgers.I found this recipe online and made a few adjustments before my first time baking:- converted all quantities to metric- adjusted for 4 buns- reduced sugarGiving credit where it's due, here's a link to the original: https://www.allrecipes.com/recipe/233652/homemade-hamburger-buns/ David -

Buns for Sliders Buns for Sliders
I made this using a bread maker, but you can knead it by hand. We love sliders but we can't find the perfect buns for them. You can glaze the top with yolk and sprinkle toasted sesame seeds on top for better finish. This recipe will yield about a dozen buns, more or less. If the buns are too thick, cut and remove the middle part. You can use this for sandwiches later! When you are making bread, sometimes you need to add more flour or fluid. Check the consistency of the dough and add flour or fluid accordingly. Angela Mertoyono -

My Family's Jam Buns My Family's Jam Buns
I don't like the jam filling coming out from the bread so I tried several times to make jam bread filled with thickened jam, which I learned in my bread class. The explanation of how to shape each bun might be confusing...have a try if you fancy. At Step 7 try not to stretch the dough when folding the dough in half by scraping the dough, using a scraper. At Step 9 when you seal the dough, raise the dough slightly and you can seal the joints tightly. For 6 buns. Recipe by Hiremama cookpad.japan -

I wanted to have hamburgers, so I made the buns myself. To prevent the dough from drying out, cover it with a wrung out kitchen towel while it rests, and spray with water during the second rising. The buns will brown quickly about 10 minutes into the baking time, so check on them occasionally.
