Ingredients

4-5 pe3 servings
  1. For sambhar--
  2. 1 cupsoaked toor dal
  3. 1/2 tspTurmeric powder
  4. 1/2 teaspoonchilli powder
  5. 1/2 teaspoonCoriander powder
  6. as per tasteSalt
  7. 1 cupguard chopped
  8. 1 cupchopped tomatoes
  9. 1 cupchopped onion
  10. 1 cupchopped bringal
  11. as requiredcurry leaves
  12. as requiredMusterd seed
  13. as requiredOil
  14. For sambhar masala--
  15. 2 teaspoons chana dal
  16. 1/2 tbspcumin seeds
  17. 1 teaspoonCoriander seeds
  18. 7-8red chillies
  19. 6-7black pepper
  20. 1cardamom
  21. 1clove
  22. 1-2 tablespoonstamarind pulp

Cooking Instructions

    Take 1 cup semolina in mixing bowl add 1/2 cup curd+1/2 teaspoon baking soda +1/teaspoon baking powder +salt as per taste mix well. Add water as required and prepare an idli batter consistency. Allow to rest for 15-20 minutes or till the semolina absorb water. Pour the batter onto greased idli plate. Steamed them on a medium flame for 15 minutes or till the idli are cooked completely.

    Heat a pan add4-5 tablespoons oil add 1/2 teaspoon Cumin seeds +1/teaspoon Mustard seeds and saute for 10 seconds. Add chopped onions +chopped green chilli and saute for 2 minutes.add 1 teaspoon Turmeric powder +chill powder +1tablespoon coriander powder and saute for 30 seconds add chopped tomatoes +chopped brinjal +chopped bottle guard and saute for 4-5 minutes on high flame. Then add toor dal and mix it with, add water +tamarind pulp and cook until the toor dal vegetables are cooked.

    Sprinkle the sambhar powder when it begins to bubble switch off the stove. And serve the hot idli with sambhar.

    For sambhar masala-- Roast all the ingredients and grind together to make a powder.
