Onion Soup with Pancetta

I came up with this recipe as a way to use my homemade pancetta.

The key is to sauté the pancetta well to remove any excess fat.

The sweetness of the onions and the saltiness of the pancetta work amazingly well together in this divine soup.

Ingredients

4 servings
  1. 100 gramsHomemade pancetta
  2. 2Onions
  3. 800 mlWater
  4. 2Chicken stock cubes
  5. 80 mlSake
  6. 1Salt

Cooking Instructions

    Dice the homemade pancetta into 7 mm cubes. Sauté until the fat melts into grease, which you can discard.

  2. 2

    Chop the onion into 7 mm rounds, and break them up as you add them to the pan. Sauté everything together over medium heat.

  3. 3

    Once the onions are cooked until the edges become translucent, pour in the water and sake. Break in the chicken stock cubes. Cover the pan and let it simmer.

    Taste, and season with salt. It's done when it tastes perfect!

    Serve with Parmesan cheese or dried parsley!
