Sambar with winter vegetables(One pot no onion no garlic sambar)

Ingredients

4 persons
  1. 1 cup (150 g)masur dal/ toor dal/ 50:50 toor and masur dal
  2. as requiredWinter vegetables (radish, beans, carrot, Madras cucumber)
  3. 2medium size tomatoes
  4. as requiredSalt to taste
  5. as requiredLemon size ball of tamarind
  6. 1/2 tspturmeric powder
  7. 1/2 tspred chilli powder
  8. 3/4th -1 tsp sugar
  9. 1/4th tsp hing
  10. 2 tspghee
  11. 1 tbspsambar powder
  12. As requiredWater nicely covering the dal and vegetables
  13. for sambharmasala paste
  14. 1/2 cupcoconut
  15. 2 tbspsambar powder
  16. 1 tbspsoaked raw rice
  17. 1-2dry red chillies
  18. 1fresh green chilli
  19. as requiredSalt to taste
  20. 1/2 tspsugar
  21. as requiredWater to make a thick paste
  22. For tadka
  23. 1 tspoil
  24. 1 tspmustard seeds
  25. 1 tspcumin seeds
  26. handfulCurry leaves
  27. 2-3dry red chillies
  28. 1 dashhing

Cooking Instructions

    Soak the dal for 1-2 hours in plain water.
    Next with the ingredients mentioned above prepare sambar masala paste. Keep aside.

    Next chop the vegetables.

    Now in a pressure cooker, add salt, turmeric powder, red chilli powder and hing.
    Add the soaked and strained dal, chopped vegetables and tomatoes..

    Put ghee.

    Close the cooker lid and pressure cook at medium heat for 3-4 whistles. Switch heat off and let the cooker release pressure.
    Side by side extract the pulp of tamarind.

    As cooker cools down, open the lid. Add the prepared sambar masala paste. Add the strained tamarind pulp.

    Add sambar powder and sugar Give a nice gentle mix

    Now place the sambar on slow heat and side by side prepare for tadka.
    Heat a tadka pan with oil.
    Splutter mustard seeds and cumin seeds.
    Add dry red chillies, hing and curry leaves.
    Switch off the flame.

    Put the tadka into sambar.
    Give a nice gentle mix. Add water as needed to maintain consistency. It should not be thick.
    Now let the sambar come to boil.
    Switch off. It's ready!!

    Serve hot with idli/ dosa/ rice

    Nb: if you want to include onion and garlic, then at the time of giving tadka into the hot oil put mustard seeds, cumin seeds, dry red chillies, curry leaves, onion (small) slices, 5-7 pounded garlic and hing. Fry till brownish then add into the dal.
