Coto Makassar / Beef Soup
This is Coto Makassar or beef soup in peanut gravy, it is made from beef and beef tripe, a famous Indonesian traditional food originating from Makassar, South Sulawesi. This dish traditionally serves with ketupat or buras or just with steamed white rice. And Indonesians love to eat this coto with sambal tauco (chili sauce with fermented soy bean). I did not make the sambal tauco this time because I added some chilies in my gravy. So, this coto was already spicy.

Corn Tempura
When corn is in season, my family always requests this dish. It's a crispy, sweet tempura made from fresh corn. The origin of this recipe: I once saw a TV show featuring tempura made with fresh corn and wanted to try it at home. It's crispy and seasoned only with salt, which makes the corn taste incredibly sweet. This is a favorite recipe that gets requested every corn season.

Crispy Corn Jijimi
This is the corn version of okra jijimi pancakes. The crispy texture of the corn is a contrast to the light fluffiness of the okra. You can enjoy the natural sweetness of the corn too.Drain the corn very well. I've made 1 big pancake for this recipe, but small pancakes are easier to flip over and look prettier when cooked. Use whatever sauce you like. Besides jijimi sauce it's also delicious with okonomiyaki sauce, mayonnaise, ketchup and so on! For 2 servings. Recipe by Muuko

Shrimp, Edamame, and Corn Tempura Fritters
I became a recipe tester for a certain company, so I made these tempura fritters that my daughter would enjoy. It came out really light and crispy. Maybe it's because of the oil.You can use fava beans instead of edamame.Make sure to pat dry the shrimp and corn (I used canned corn) with paper towels. If they're wet, the frying oil may splatter. Bacon and Tofu stir-fry in Japanese Style gravy
Japanese style stir-fry with gravy (It's called "An-kake, pronounced "kakay"). Made with whatever I found in the fridge. You can use any vegetable or meat for this dish. I used home-made bacon to add flavor, but you can omit it if you are vegetarian. I would have added mushrooms if I had them. The gravy (An) is usually made with potato starch as a thickener, but you can use corn starch (or corn flour) if you don't have it. By the way, "kake" means to "pour over" so an-kake is a dish with gravy on it.

Chicken and Sausage Gumbo (as taught to me by my FRENCH CAJUN grandma!)
If you want a thicker Gumbo use more flour and oil to make more roux.I add in a few boiled eggs about half an hour before it's done.If you've been to New Orleans this is similar to the Gumbo you'll find there with a bit of a difference. This is an authentic Cajun Gumbo recipe. Down here we serve it with potato salad. Sprinkle a little Gumbo filé on top for an even better cajun experience. Sometimes we add shrimp (small size) or ham (especially when I have leftovers from a baked ham). Also, if you're not familiar with making a roux you can buy it pre made in light or dark. Always use dark for this. I suggest making it yourself. You might not get it quite right the first time or two but it's worth it to learn.
