Ingredients

  1. 2 1/4 cupall-purpose flour
  2. 3 3/4 tspbaking powder
  3. 1 tspsalt
  4. 1/8 tspground red pepper
  5. 1/2 cupdiced slab bacon (about 3 oz)
  6. 3 tbspunsalted butter, cubed & chilled
  7. 3/4 cupshredded sharp cheddar cheese (about 3 oz)
  8. 1 1/2 cupheavy cream
  9. 2 tbspunsalted butter, melted

    combine first 4 ingredients, cover & freeze 8 hours

  2. 2

    preheat oven to 425* cook bacon over medium-low heat about 6 minutes or until brown but not crispy. drain on paper towels & cool completely

  3. 3

    toss cubed butter with flour mixture in a large bowl. mix with hands, flattening butter until mixture resembles coarse crumbs. stir in bacon & cheese. add cream, stir until just combined. scoop dough evenly into 1 tbsp mounds. arrange 1 inch apart on baking sheets

    bake 8-10 minutes or until golden and cooked through. transfer to wire rack & brush with melted butter. serve hot or at room temperature
