So I had this pack of spaghetti laying around and some peppers and carrots in my fridge that I didn't want to go bad. And viola😃 stir fry came to mind. That I enjoyed it, is an understatement. It was yum😋

Ingredients

  1. 185 gSpaghetti
  2. 1Chicken Breast (Cut in small strips and marinated)
  3. 3 TablespoonsVegetable oil
  4. 1Green Bell Pepper (cut in strips)
  5. 1Red Bell Pepper (cut in strips)
  6. 3Small Carrots (cut in strips)
  7. 1 TablespoonSoy sauce
  8. 1 TeaspoonOyster sauce
  9. 1Medium Size Onion (diced)
  10. 1/2 TablespoonGarlic Paste
  11. Seasoning powder
  12. to tasteSalt
  13. 3Small Scotch Bonnet Peppers (finely diced)
  14. 1 TeaspoonCurry
  15. 1 TeaspoonThyme

Cooking Instructions

    Cook spaghetti in enough boiling water. Add salt and drizzle oil to avoid sticking. Strain in a colander and set aside. Season chicken breast with black pepper, seasoning cube, paprika and a pinch of salt. Allow to marinate in the fridge for an hour. Heat up a pan or wok, add vegetable oil and stir fry the chicken until cooked.

    Add diced onion and garlic paste. Stir fry for about 2 minutes. Add scotch bonnet pepper and carrots. Stir fry for about 2 minutes for the carrot to reduce its crunch. Add the bell peppers, curry, thyme, soy sauce, oyster sauce and seasoning. Mix and stir fry for another 2 minutes. Finally add the cooked spaghetti and stir.

    Check for salt.

    Note: Soy sauce contain a significant amount of salt.
