Creamy Banana Jam in 5 Minutes!

We sell this amazingly delicious jam at work, so I made this! At work, they use 1 kg of bananas and vanilla beans to make this but, I made an easy-to-make-at-home version!
While boiling it, scum will rise, so be sure to skim it off. It gives a prettier result.
I wanted to use vanilla beans to make this, but I used vanilla oil (if you use vanilla essence, turn off the heat before add it).

Cooking Instructions

Cut the banana into 5 mm thick pieces and mix in the 2 teaspoons of lemon juice.

Combine the water and sugar and cook over low heat. Once the sugar has melted, add the banana mixture and vanilla oil. Increase the heat to medium-high and boil for 5 minutes while stirring. Then, it's ready!

If you plan to store this for a while, put it into a sterilized jar and then freeze it. You can mix it with yogurt or you can add it to muffin batter to make banana muffins.
