Cook the lentils, toor and moong in a bowl with 3c water in a pressure cooker
When The lentils are cooking in the cooker, attend to the rest of the chores.
To make the paste:
Fry the paste : fry paste ingredients ingredients in 1 tbsp hot oil in a frying pan over medium heat. Fry the dhals, and coriander seeds first. the dhals will turn golden. Add the chilies Turn off the stove when aromatic. soak the fried ingredients in water., 15 minutes, blend in a mixie to make a smooth paste - 4
In a heavy kadai over medium heat add the oil, 1 tbsp ghee. Add the mustard seeds, let it splutter, stir in Fennel, hing, methi and red chilies. Sauté Onions, garlic, green chilies, and curry leaves. Add turmeric When onion turns slightly brown add the tomatoes, stir; cook for 3-4 mins. Let the tomatoes get soft. Add 3 cups water, bring it to boil.

Then add pumpkin slices; Reduce heat slightly after boiling. Add the cooked lentils and stir well. Add 3 cups water and sambar masala powder and stir. Dilute tamarind paste in 1 cup water, add to the rest, stir and bring to a boil. Stir in the coconut paste. After a couple of minutes turn off the stove.

Add salt, remaining ghee and garnish with chopped coriander leaves
Delicious nutritious fragrant spicy sambar is ready to taste.
Taste. You may serve the sambar with Rice, chapati, parantha, adai. Idli, or Dosa
