Ingredients

2 servings
  • For the curry
  • 1 tbsolive oil
  • 1lg shallot, sliced thin crossways
  • 3lg crimini mushrooms, sliced
  • 1/2 cupwaffle cut carrots
  • 4lg cloves garlic, coarse chopped
  • 1 qtseafood stock
  • 1 piecegalangal root, about the size of a tennis ball. Wash slice into 4 pieces
  • 1 tbscoconut amino
  • 1 tbsfish sauce
  • 1 tbsseasoned rice vinegar
  • 1 tbsbrown sugar
  • 1 tspground ginger
  • 1 tspturmeric
  • 1 tspcurry powder
  • 1 tbsred curry paste
  • 2bay leaves
  • 1 (14 oz)can coconut milk, full fat
  • 3/4 poundshrimp, peeled deveined
  • 4scallions, chopped
  • 1 pinchsalt and pepper to taste
  • 1 tspSriracha sauce or garlic chili paste
  • For the lobster
  • 2warm water lobster tails. 4 to 6 oz each
  • 1drizzle of olive oil
  • 1 pinchsalt, pepper, garlic and onion powder, and 5 spice
  • 1drizzle of black garlic hot sauce
  • Other ingredients
  • 8 ozdried rice noodles
  • 1 dashfurikake seasoning

Steps

    In a large saucepot, heat oil. Add shallots, garlic, carrots, garlic, and mushrooms. Sauté on medium heat until shallots and mushrooms sweat off. Remove veggies to a plate and set aside.

    In the same pot, add the rest of the curry ingredients except for the shrimp. Bring to a simmer. Simmer lightly for 30 minutes. After 30 minutes, remove the galangal root and bay leaves.

    While curry is cooking, line a baking sheet with foil. With a sharp knife, cut lobster tails in half. Lay on baking sheet. Season with the seasonings listed, then drizzle with olive oil and black garlic hot sauce. Place in a preheated 425 degree f oven. Bake for 6 minutes. Remove when done.

    Prepare rice noodles in the meantime according to package instructions. Some need to soak others don't.

    5 minutes before serving, add veggies and shrimp back into the pot. Cook on heat for 2 minutes then cut the heat and leave pot on the burner. Add salt and pepper to taste.

    Plate the rice noodles, cover with curry. Top with lobster tail. Garnish with furikake seasoning and more black garlic hot sauce if desired. Serve immediately. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
