My family did NOT like this. I thought it had way too much quinoa. I probably won't make this again, but if I did I would use about half the amount of quinoa.

Ingredients

  1. 1 cupdry quinoa
  2. 2 cupWater
  3. 2 cupSlice grape tomatoes
  4. 1 cupChopped spinach
  5. 1/2 cupSlice kalamata olives
  6. 4 ozfeta cheese
  7. 1 tbspKalamata olive juice
  8. 2 tbspevoo
  9. 2 cloveMinced garlic
  10. 1 tspDry oregano
  11. 1 tspSalt
  12. 1/2 tspPepper

Cooking Instructions

    Combine the water and quinoa in a medium sized pot and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until the quinoa has absorbed all the water fluff with a fork.

    While the quinoa cooks mix the dressing. combine the olive oil, olive juice, garlic, oregano, salt, and pepper in a small bowl mix well and set aside.

    In a large bowl combine the sliced tomatoes, olives, and spinach. add quinoa and mix well. drizzle the dressing on top and add feta cheese.

    Toss everything together serve immediately or store in the fridge until serving
