These make a quick and simple lunch or light dinner. They are simple to make and so tasty.

Ingredients

4 servings
  1. Tuna Salad:
  2. 2 cans (6 oz.)each tuna
  3. 1/3 cupmayo
  4. Juice from 1/2 lemon
  5. 2 tbsp.finely diced celery
  6. 2 tsp.Dijon mustard
  7. 1/4 tsp.each salt and pepper
  8. Tuna Melts:
  9. 4English muffins, split
  10. Tuna salad
  11. Shredded cheddar cheese

Cooking Instructions

    To make the tuna salad, just place the tuna in a large bowl and break it up with a fork. Stir in all the rest of the ingredients together and set it aside. Set the oven to broil and lay out the split muffins on a baking tray. Broil them until toasted to your liking, then set the oven temperature to 400°F.

    Top the toasted muffins with the tuna salad, then with a sprinkle of cheddar. Place them in the oven for 8-10 minutes, until the cheese has melted. That's it! Serve it up with whatever side items sound good.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
