Boil the potatoes in a moderate time

Rinse with little cold water and strain of water,let.it cool for a while

Add butter and nutmeg with little egg yolk,salt and pepper

Combine all ingredient together to become solid

Form a shape of croquette using pallete knife edging the end well

Make three way pattern include eggs in a plate,another plate with flour,another plate for a breadcrumbs

Dip the shapes into eggs and flour to breadcrumb continuously

Dip into the Deep Fat Fryer 180-200celcius continously

Remove from the fat fryers and drip dry the fat with spider

Garnish with big thyme leaves and tomatoes julienne
