Ingredients

  1. 2 cupmaida / plain flour
  2. 1 tbsprava / semolina
  3. 1/2 tspsalt
  4. 3 tbspghee
  5. 3/4 cupwater
  6. as neededoil for deep frying
  7. for stuffing:
  8. 2 tspoil
  9. 1 tspcumin
  10. 1 tspcoriander seeds, crushed
  11. 1/2 tspfennel / saunf
  12. 2green chilli, finely chopped
  13. 1/2 tspginger paste
  14. 1/4 tspturmeric
  15. pinchhing / asafoetida
  16. 1/2 tspkashmiri red chilli powder
  17. 1/2 tspgaram masala
  18. 2potato, boiled & mashed
  19. 1/2 tspaamchur / dry mango powder
  20. 1/2 tspsalt
  21. as neededTamarind Chutney
  22. to tasteGreen Chutney
  23. 8-10Fried potatoes cubes
  24. to tasteChaat masala
  25. 1 cupThick Curd

Cooking Instructions

    Prepare the kachori dough and rest for 20 minutes.
    prepare the stuffing by heating 2 tsp oil, 1 tsp cumin, 1 tsp coriander seeds and ½ tsp fennel. saute till it turns aromat.

    Add 2 green chillies, ½ tsp ginger paste and saute for 30 seconds.
    keeping the flame on low, add spices.

    Now add 2 boiled potato and mashed potato, ½ tsp salt and mix well.
    aloo stuffing is ready.
    now pinch a small lemon sized ball and flatten it.

    Scoop 2 tsp of prepared aloo stuffing and place in the centre.
    get the edges together and form a bundle.
    close the top by pressing and flattening.

    At this stage gently press the edges and flatten to form a poori size.
    when the oil is medium hot, add prepared kachori and fry.

    Now place 1 large kachori.
    further, gently make a hole in the centre without breaking entire kachori.

  7. 7

    Pour curd in centre of kachori.
    also add in tamarind chutney, green chutney, cumin powder, chilli powder, chaat masala and salt.
    further top with fried potatoes slices.

    Serve immediately.
