Ingredients

25 minutes
Serves 1 serving
  1. 2corn tortillas
  2. 1 cupsliced mushrooms
  3. 1 cupspinach
  4. 1 ozOaxaca cheese (about 30 grams)
  5. Mexican salad (tomato, onion, radish, cilantro, lime, and salt)
  6. Seasonings: dried chile de árbol or pepperoncini, black pepper, garlic powder, and salt
  7. Olive oil, to taste
  8. Optional: onion and bell peppers to add with the mushrooms

Steps

25 minutes
  1. 1

    Sauté the mushrooms and season to taste.

  2. 2

    In a skillet over low heat, warm the tortillas on both sides until they become crispy like tostadas. Don’t let them burn!

  3. 3

    Place the cheese on the tortillas and add your choice of vegetables (mushrooms and spinach). Add your preferred seasonings. Wait until the cheese is melted and bubbly.

  4. 4

    Top with your favorite salad or hot sauce. Enjoy!
