Ingredients

  1. CHICKEN
  2. 1 lbboneless, skinless chicken breasts
  3. 2 tbspmayonnaise
  4. 1 tbspsoy sauce
  5. 1 tspkung pao dry seasoning blend
  6. 1/2 tspblack pepper
  7. SALAD DRESSING
  8. 1shallot, chopped
  9. 2 tbspchopped celery
  10. 1/3 cuppeanut or canola oil
  11. 1/3 cupseasoned rice vinegar
  12. 1/4 tspground ginger
  13. 2 tbsptamari soy sauce
  14. 2 tspgranulated sugar
  15. 1garlic clove
  16. 1 tbspfresh lemon juice
  17. 1/4 tspblack pepper and salt to taste, keep in mind soy sauce is salty. I don't add any additional salt so taste and adjust if you think you need more.
  18. 1 tspsriracha hot sauce
  19. 1 tspblack sesame seeds
  20. 1 tspwhite seasame seeds
  21. SALAD
  22. 6 cupAsian slaw mix, which is a blend of shredded napa cabbage, shredded carrots and thinly sliced celery
  23. 2small cucumbers, sliced
  24. 1small red onion, thinly sliced
  25. 1/4 cupjulienned peeled apple, I used a tart granny Smith apple
  26. 1/2 pintsgrape or cherry tomatos
  27. 2 tbsproasted almonds
  28. 2 tbsproasted peanuts

    MAKE SALAD DRESSING

    Combine all salad dressing ingredients EXCEPT seasame seeds in a food processor or blender until smooth, transfer to a bowl and stir in sesame seeds, set aside

    COOK CHICKEN

    Preheat oven to 375. Line a baking dish with foil, spray with non stick spray

  5. 5

    In a small bowl combine mayonnaise, soy sauce, kung pao seasoning and pepper, whisk until smooth

    Brush chicken all.over with.seasoned mayonnaise/soy mixture., place on prepared dish and roast about 15 minutes, until chicken is just cooked through. Keep in mind thinner breasts may cook.faster and thicker ones a bit longer. For juicy chicken don't.overcook. Let chicken rest 5 to 10 minutes before slicing

    Combine all salad ingredients in a bowl, toss with enough dressing to lightly coat. Turn out onto serving platter. Slice chicken and top salad with chicken. Serve extra dressing on the side

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
