Ingredients

1 serving
  1. Salad Ingredients :
  2. 1 1/2 cupromaine lettuce (or lettuce of choice)
  3. 1/2 cupthinly sliced red cabbage
  4. 1small carrot, peeled and shredded
  5. 1grilled chicken breast, sliced
  6. 1/2 cuproasted butternut squash (or roasted sweet potato)
  7. 1 tbsp.dried cranberries
  8. 1 tbsp.pumpkin seeds
  9. 2 tbsp.roughly chopped pecans (or walnuts)
  10. Maple Dijon Vinaigrette Ingredients :
  11. 2 tbsp.extra virgin olive oil
  12. 1 tbsp.apple cider vinegar
  13. 2 tsp.- 1 tbsp. pure maple syrup (depending how sweet you want)
  14. 1 1/2 tsp.dijon mustard
  15. to tastesalt and pepper

Steps

    Toss the chopped romaine, sliced red cabbage and shredded carrots all together.

  2. 2

    Top with the roasted squash, chicken, cranberries, pumpkin seeds and nuts.

  3. 3

    For the dressing, simply whisk together everything in a small bowl or place in a small jar with a tight fitting lid and shake. Start with just the 2 tsp of maple syrup and increase to make the dressing sweeter, if you'd like.

    Top your salad with desired amount of dressing and enjoy!

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
