Cauliflower Fritters

Ingredients

2 servings
  1. 1medium size Cauliflower cut in small pieces
  2. 2Eggs, lightly beaten
  3. 1/2 cupbreadcrumb
  4. 1/4 cupplain flour
  5. 1 tablespoonfresh basil, finely chopped
  6. 1 tablespoonchive, finely chopped
  7. 2 tablespoonsgrated Parmesan
  8. 1little bit of Salt and black pepper
  9. 2 tablespoonsolive oil for fry
  10. 1 teaspoonbaking powder

Cooking Instructions

    Cook cauliflower in a pot of boiling salted water until tender. Drain, cool under running water.

    Place half the cooked cauliflower in a bowl and mash with a fork.

    Add the eggs, herbs, breadcrumbs,flour, baking powder and Parmesan. Stir in the remaining cauliflower and season with salt and pepper.

    Mix well.

    In the frying pan add 1 tablespoon of olive oil on low to medium heat and cook rounded tablespoons of the cauliflower in batches until crisp and golden brown.

    Remove fritters from pan and place on a paper towel. Repeat with the remaining batter and add more oil if needed.

    Serve with Salsa sauce.
